My Breakfast Salad

This is my first meal of the day.  It consists of:
  • 1 pound of non-starchy vegetables: including 4 big handfuls of chopped greens and at least 2 cups of chopped salad vegetables
  • 1/2 cup (heaping) of Quinoa Tabouleh
  • a small handful of fresh chopped cilantro
  • Chef AJ's Barefoot Dressing
  • 1 pound of fresh fruit
